eating healthy isn’t easy and it’s definitely intimidating. when i started changing my diet to include healthier foods and cut out the processed foods, i was lost to say the least. veggies were always foreign to my diet. vegetables rarely made it onto my plate (except when forced by my momma) and even more rarely made it into my belly. so when i wanted to start incorporating vegetables in my diet, i didn’t know where to begin. i’d seen people peel them, roast them, boil them, fry them, bake them, eat them raw….still not at that level yet! i prefer to roast my vegetables with a little olive oil, salt, and pepper. trust me, those three simple ingredients go a long way with vegetables. my favorite at the moment is roasted brussels sprouts and butternut squash! SO yummy!
